Quick Recipe: Gluten Free Stuffed Butternut Squash.

This stuffed butternut squash recipe is one we make to go with roast dinners. It's so easy, flavourful, and quick to make. It's also gluten free.



Ingredients

1 large butternut squash
150g gluten free breadcrumbs (we make our own)
100g feta cheese (crumbled)
100g chopped mixed nuts
1 medium red onion (diced)
1 tbsp olive oil
20g raisins (chopped roughly)
1-2tbsp fresh chopped parsley


  1. Preheat oven to 200C.
  2. Slice butternut squash straight down the middle and place in oven on a grease proof sheet for 15-20 minutes until softened.
  3. Fry the onions and olive oil lightly in a pan on medium heat for 8-10 minutes.
  4. Once onions are softened, mix all ingredients but the squash in a bowl until combined.
  5. Once the squash has cooked, remove from oven and scoop out about half of the filling and discard (no need to waste! You can use your discarded squash filling in other recipes such as soups, lasagnes etc.)
  6. Place stuffing evenly inside the squash "boats" and place back in oven for a further 5-8 minutes, then remove from oven and cool for 5-10 minutes before serving.
