For this, I have the help of my 5 year old, Riley - who after changing from her school tracksuit and into her self styled little ensemble - was looking pretty funky and was ready to bake.
These are very quick to make, and are really tasty little cookies - and healthy too!
This recipe will make 12 small cookies.
- Almond pulp (from 1 cup worth of almonds)
- 20g cocoa powder ( I use Green and Blacks organic fair trade cocoa powder)
- 2 tbsp honey
- 1 egg (whisked)
- 1 tsp vanilla extract
- 1 tsp almond extract
- Mix all ingredients in a bowl.
- Form into 12 balls, place trey lined with greaseproof paper and press down the centre of each ball with your thumb gently.
- Bake on 200 degrees C for 15-18 minutes.
