Almond Pulp Cookies - a gluten free recipe.

After making your own almond milk you will be left with a lot of almond pulp that looks like this -


it can be dehydrated and used in a lot of ways, but I don't really have the patience for that so I use it all straight away and just make a batch of gluten free cookies.
For this, I have the help of my 5 year old, Riley - who after changing  from her school tracksuit and into her self styled little ensemble - was looking pretty funky and was ready to bake.


These are very quick to make, and are really tasty little cookies - and healthy too!
This recipe will make 12 small cookies.



  1. Mix all ingredients in a bowl.
  2. Form into 12 balls, place trey lined with greaseproof paper and press down the centre of each ball with your thumb gently.
  3. Bake on 200 degrees C for 15-18 minutes.
